Jam-Filled Vanilla Biscuits

 

These beautiful jam-filled biscuits are perfect if you are looking for an afternoon activity with the kids.  They also make a lovely homemade gift. There are no fancy ingredients so you possibly already have everything you need in the cupboard.  Once they have cooled you can begin slathering on your jam and they'll be ready to eat in no time.  You don't even need to chill the dough!  They really are very straight-forward. If you're a beginner to baking biscuits, this is the perfect place to start.  For those who are a little more adventurous, it's a fantastic way to use some homemade jam this coming berry-season. So if you're going to spend some of your outdoor time this spring or summer picking your own fruit, keep this recipe saved! 

Recipe Notes:

*If your butter isn't room temperature, cut it into small cubes and blast it in the microwave for 10-15 seconds.  You have to be very careful not to melt it completely. 

*Only cut shapes out from half of your biscuits.  The bottom biscuits need to remain whole.

*It can be easier to cut the inner shape from the 'top' biscuit when it's already on the baking tray.  If you are having trouble removing the centre shape you can use a toothpick or a knife to hoist it out. 

*Use smooth jam.

*When you sprinkle icing sugar over your finished biscuits don't worry about covering the jam, as sugar on the jam will just dissolve into it and leave a lovely contrast. 

*Be generous with the jam!

  

 Ingredients

200g unsalted butter

200g caster sugar

2 medium eggs

Pinch of sea salt

1 teaspoon vanilla extract

500g plain flour (plus extra if needed)

Instructions

1. Preheat oven to 170c (150c fan). 

2. Cream butter and sugar until well incorporated, light and fluffy (use a beater not a whisk).

3. Scrape the bowl and the add eggs one at a time, beating between each addition.

4. Add the salt and vanilla.  Then add half of the flour slowly with the mixer on a low setting.  You can tip flour in gradually over the side of the bowl if you are using a stand mixer, or add a cup at a time if you are using a hand mixer.  

5. Scrape bowl and add the remaining flour.

The dough needs to form a solid ball, if more flour is needed add it now until the dough is no longer sticky and you can handle it easily.  Add flour by the tablespoon until you are happy. 

6. Roll the dough out and cut as many circles as you can until all the dough has been used.  

7. Cut a smaller shape from half of the circles, creating a 'top' and 'bottom' biscuit. 

8. Bake for approximately 16 mins (turn tray after 8 mins for an even bake)

9. Leave to cool for 5 minutes before transferring to a wire rack. 

10. When the biscuits are cool you can use a teaspoon to dollop a generous helping of jam onto each whole round biscuit before putting the 'lid' on. 

11. Sprinkle with a dusting of icing sugar to finish.
